Slimming World Quiche-
3 eggs (I use free range medium or/ and large)
150g of very low fat cottage cheese
28g cheese- whatever kind you want - use as your healthy extra A or syn it (or 42g if using reduced fat cheddar)
Vegetables - really you can put what ever and as many veg in this quiche as you want - I used
1 courgette
2 smallish red onions
2 carrots grated
1 large tomato
Meat- as I was having an extra easy day I used 2 sliced of bacon but omit it for a green day.
Method:
Mix the cottage cheese, eggs together and season with salt and pepper
pre fry the veg and bacon in spray oil just to lightly soften - unless you like the bite then just add them raw (I prefer to soften them a tad)
Get a dish which doesn't have too large a surface area I used a rectangular pyrex glass dish the kind that comes with a lid and poor the vegetables and bacon into the bottom of the dish and spread evenly so the bottom of the dish isn't visible.
Pour the cottage cheese/ egg mixture evenly over the vegetables/bacon and top with cheese and sliced tomatoes.
Bake for 30-40 minutes at gas 4.
Personally I think the quiche tastes better when left to cool as it seizes up and becomes considerably less wet then when it first comes out of the oven- I often make it the night before and slice it up for lunch in the morning straight from the fridge.
The best thing is that it is so versatile the recipe can be adapted to suit you- your favourite cheese- your favourite vegetables- it's great at using up leftovers and I have even made themed ones.....
Chicken, bacon and stuffing? layer cooked chicken on the bottom of the dish then red onions and bacon then make up some stuffing about 5 syns worth and place little balls of it over the top and pour the cottage cheese/ egg and cheese over the top
Caramelised red onions and goats cheese? fry some red onions add a dash of balsamic and a little teaspoon (or to taste) of sweetener and layer in dish with sliced goats cheese over the top and the cottage/cheese mixture.
There are literally hundreds of ideas and probably some way more interesting ones then I can think of
